| Abstract: | Structurally related flavonoles quercetin, rutin (quercetln-3-rutinoslde), morin, fisetin (5-deoxiquer-cetln) were investigated in the reaction of peroxidase oxidation. The products and catalytic effectivity of the peroxidase oxidation of flavonoles were examined with the methods of UV-VIS-spectroscopy and enzyme kinetics. The results of the study are analysed according to structure-activity relationships of flavonoles. |
